May have been mentioned already but the Applecross road (just north of the Skye bridge) looks like it'd be too good to miss.....
It's really just too far for a quick trip up and over the Bealach Na Ba pass from Skye - due to the standard of the roads it would need a full day to get there and back, although it could be an option for the Sunday for anyone who wants to head north before heading south again. I've driven it in a few different vehicles and TBH it's not a road you can hoon along due to the width and number of blind corners and summits.
