What’s up with my suspension?

Benefits of coilovers is that you can adjust the ride height to what you want, I have set mine lower than standard m sport suspension so it sits lower and looks nicer on the arches in my option  you can keep the shocks you put in the rear and just change to adjustable springs. If you change the springs at the front however and have stock sport suspension I believe you need the 270mm springs.

Don’t bother with Bilstein dampers.

Either replace with OE shocks + springs or upgrade to the likes of good quality coilovers.

Release the handbrake and see if that makes a difference....I replaced front springs and noticed one side was lower. Turned out I had pulled the handbrake before a total stop after testing...hence the car sat funny.

If you're using standard springs you might as well just stick with OEM style shocks, so that would be either Sachs or Bilstein B4. The B6 is uprated and firmer than the factory ride, which for UK roads is already harsh.
