What do you pick from the cheeseboard?

OGs post on the light side today made me think about cheese - one of my favourite comfort foods. I've had a lot of different kinds over the years but think I've found some favourites in:

Gruyere
Bergkaese - recently eaten a lot in Germany
Mature cheddar and extra mature (often with Tabasco on crackers)
Mexicana - which is a mish mash combined with chillies

Keen to know what you guys like.

Cant stand any of that soft s**t. Just some chedder thanks!

Camenbert/brie is always a treat.
Goats cheese despite the fact it seems to paralyse my face

Pet hate is almost any UK 'soap' served in vacuum packs in supermarkets badged as cheese

All of it. I could spend hours with a cheeseboard, as long as there's a good selection of crackers and chutneys to go with it.

My guilty pleasure, however, is breaded mozarella sticks with aioli dip.

Cardiac arrest in 5...4...3...2...

saint agur and roquefort

good mature cheddars

applewood smoked

blacksticks blue / creamy

Lancashire - smoked, crumbly (on toast)

Garstang blue

there could be a long old list here

I like canned cheese (cheese whiz) It's easy to carry around and will last for decades.
