What do you pick from the cheeseboard?

As an aside...

Best cheese for cheese on toast ???

I actually quite like cheese, just not smelly ones. And I love pizza. But for some reason melted or baked cheese and cheese on toast gross me out

Really!!............. But it goes so well with a pint of ale !!

Any brie type that comes in the round wooden box, put the whole round cheese in the oven for 30mins for instant fondue, enjoy with soda bread, olives and a nice beajolais or shiraz...

...I know what I'm havin for dinner tomorrow :)

OGs post on the light side today made me think about cheese - one of my favourite comfort foods. I've had a lot of different kinds over the years but think I've found some favourites in:

Gruyere
Bergkaese - recently eaten a lot in Germany
Mature cheddar and extra mature (often with Tabasco on crackers)
Mexicana - which is a mish mash combined with chillies

Keen to know what you guys like.

Loving your style with Tabasco! My mouth waters at the mere thought of Tabasco!!

I love a bit of auvergne blue with a nice digestive/sweet cracker... Or we had a right old stinker at Xmas, can't remember the name now (epo...something?) but was so gooey and hints of brandy, bootiful!

Although an old favourite from my childhood, dairylea and ritz crackers, squeeze the darylea between two crackers and make little white worms come out of the holes...

A good Stilton is a marvellous thing, especially with a nice port or red wine.

Unfortunately a lot of the cheese labelled Stilton is flavourless shite these days. Sad.

Love most cheeses (apart from blue cheese) - especially partial to a very smelly mature cheddar. Off the cheese board, also like to pair the cheese with water buscuits and a nice chutney.

Btw - used to love the really mature cheddars you get from the Cheese Factory in cheddar gorge ... Overpriced but nice and smelly. :D

And why are they called water biscuits?! They're drier than gandhi's flip flop.
