To be honest, any colour should be fine to colour match... They just need to do proper readings, and get the paint mix right. Which BMW paintshop are you taking it to? Make sure they have a good reputation, as many don't.
I'd be surprised if any of them say they don't need to take the door off to be honest. Isolation of one panel is a lot easier to spray than it is with it on the car. Personally I would want my door taking off, because whilst you may experience issues with it lining up again (which is very unlikely to be honest), you'll definitely avoid any chance of overspray onto the other panels.
