Do I need really low viscosity brake fluid?

Sorry for a brake fluid question!
I'm off on a euro trip later this year, so mountain passes, but no track days. I'm going to renew the brakes, keep the discs standard, and thinking of ATE Ceramic pads, and was planning on getting Motul RBF600 fluid, but I see we should run low viscosity fluid in our cars? Is this necessary? I like the idea of a higher boiling point, just in case, but the LV stuff doesn't seem to compare to the RBF600. Searching the forum, it seems that the Motul fluid seems popular, but are there any problems with the thicker fluid?
