S3, S4 and S5 are the same according to the salesman in there. The number simply denotes the length of the warranty) in years).
This is what is in mine (2004 3.0), the previous owner had changed it fairly recently, no idea if this correct, I think Blue Dynamic is the mid range VARTA (Black Dynamic is budget and Silver Dynamic the premium). For a 2001 3.0 E39 I bought a Bosch S4 019, this had 800CCA.
I am far from an expert but vaguely recollect that basically bigger engines generally demand greater cranking ability but I'm sure it's more complex than this but do make sure whatever you get fits in the cradle area.
Also, more modern BMW's have to have the batteries 'coded' to the car if they have a certain type of battery (AGM). I think they work fine if you don't 'code' them but may shorten battery life, sorry I am bit vague.
