Ok, I have tried to search for previous posts, but never find ANYTHING of any use, so Im just gonna ask!

Gearknob. Standard issue is guff. Would a 'performance' BMW knob fit? Its the only one I like, not bothered about the gaitor, you can make that fit!

Silver dash panel: How is this removed and the similar detail on the centre console?

AS i said, i have used the search feature and found nothing, but Im not a friend of computers!!
 
Do you mean the ZHP one? Short and weighted? If so, then it'll fit (I have one).

Either way, IIRC all BMW knobs are interchangable since 1984, so yes it should fit if OEM.

One thing I dont get is why gearknobs are 'model specific' is it just because of the surrounding gaiter?!

No worries, it's all what you use as search terms.
gearknobs are not model specific. BMW has been using the same design since the 80's. What may be model specific is the insert on the top. (5 speed, 6 speed, M logo, etc.) and if it is lighted or not. Other than that it's more dependant on the height of the shift knob. (the e46 shifters are very tall compared to the z4 shifters for example.)
