I've got stock stereo in the car and its pish!

Not an easy one to be honest. The OE subwoofers for example are 10ohm subs. Most aftermarket subwoofers dont come with that resistance rating (generally 4 ohms is industry standard, I dont think I've ever seen an after market 6 inch sub with a rating above 8 ohms) meaning you would likely fry the OE amplifier running them if you swapped them straight out.
Also, if you were to go for an aftermarket component system, most will run their own passive crossover network rather than the inline filters that are with the stock speakers. Plus the fact aftermarket speaker are likely to be a lot more power hungry which the OE head unit/amp won't provide. A decent entry level 3 way component system which would likely fit with 6inch adapters in the kickwell might be the focal access 165-as3 @ around £200:
But they would want to be fed around 80watts RMS power per side which you wont get out of the stock amp.
If it were me, I would be looking at going the whole hog. amplifier, re-wire AND add speakers. (which in actual fact is what I will be doing in the new year...)

I was sort of hoping I wouldn't have to do just that, the normal full set I always done before. I mean the head unit is good and the sound is overall.. "Ok" let's say.

Faz_b is sooooo right. I have a Hertz HDP1 & HDP4 running Hertz Hi-Energy 3 ways. HDP1 powers the Audison Voce sub. Which sounds absolutely awesome. I must confess to having an Audison Bit-Play HD which is the best bit of kit I have listened too. All depends on the depth of the wallet.!
