Offset confusion.

Searching for some new wheels for my M coupe and getting confused with offsets. I know its best to replace them like for like but its not always possible due to manufacture,was wondering what offsets people had successfully used without fouling and not having nonstandard suspension and spacers etc. Thecurrent offsets are et42 front and et30 rear (I think)?
 
Basically, the lower the offset, the further out the wheels will sit. Thats about the best advice I can give in lamens terms, which always helped me.
 
Which is what I thought but a tsw video explained it he other way that the higher number meant further away from the car?
 
The higher the number, the further in they will sit towards the strut/inner arch etc.

Et 40 would sit closer to your inner wheel arch.
Et 20 would sit closer to the lip of the rear wing.
