Really easy... I would advise using one of the big providers (123-reg, ukreg, namecheap etc)... it doesn't cost a lot and using them means it's easier if you want to transfer the domain away later... sometimes the smaller companies cause a lot of trouble when you want to move on.
Once you have it setup there is a control panel you can login to to configure it. You can either use their email service if you signed up for one or you can forward to another service e.g. Gmail. In Gmail there are options for if you want to use your own domain... set those up and you're good to go. You'll have to pay the domain renewal fee every couple of years (pretty cheap) but if you decide to switch to the latest and greatest email service ina few years time all you need to do is update the forwarder in your control panel and you're good to go.
