Being new to the E89 world, are zhp gear knobs and cdv delete, options that are done or no?

Same for the CDV.
The 89 is a completely different drive to an 85 much less aggressive and much more refined. In truth whenever I drove my 85 I wanted to drive like a hooligan where as the 89 is much more like a wolf in sheeps clothing and will be driven both ways.
