As closure, I replaced both front hubs yesterday with a FAG 713667060 wheel bearing kit. It was an easy job and took no more than a couple of hours to do both sides.
The OSF probably didn't need replacing, but not being 100% certain which side was at fault, it was the first one I replaced. When I came to the NSF hub, it was blindingly obvious those bearings were at fault, but only once I removed the wheel and spun the hub. This was further confirmed once the old hub was removed and the bearings were visibly 'bronzed', presumably from overheating.

As a tip for anyone reading this in the future, don't buy a 1/2" 46mm Milwaukee impact socket, it's marginally too big to fit into the hub.
Torque specs are:
46mm Collar Nut: 290 Nm
Brake Caliper Steering Nuckle: 110 Nm
Guide Bolts: 30 - 35 Nm
Brake Disc: 16 Nm
