How to Separate Egg Yolks

As one who is a little challenged in the culinary dept I thought this was quite impressive.

Next question. Why would you separate egg yolks? :lol:
 
I made a white cake last week for my daughter's birthday and need to use only the eggs whites.

now can anyone tell me how you know if you have burnt a roux?
 
The white of the egg is where all the good stuff (protein) is hidden. A 3 egg omelette with 1 full egg and 2 whites is healthier than a 3 or 2 full egg omelette. That's the only time I separate them.

I thought the yoke contained more protein than the white? It's just the yokes have more bad stuff like cholesterol?
