Golf Mk4 Coolant Low STOP!

Okay, so giving it the beans back from Suffolk this evening. Got to the 50mph zone outside Bexley and as I slow down the temp gauge shoots up to 130 and the dash flashes 'Check Coolant Level. STOP'.

Car itself running fine still. Stopped to check of course. No leaks, hissing, level is bang on fine etc. Started up again - same messages but got home fine. Locked car and 5 mins later alarm goes, so pop outside again just as it stops. Opened car, key in ignition and temp lower now but fans going crazy.

Any ideas? Prongs in the coolant bottle corroded or something more terminal?
 
Seems to be just a sensor.

Okay, just took the car out from cold. Temp got to mid point standard of 90 okay. Normal driving. Coming home, accelerated hard, temp goes up and coolant warning appears again. Slow down and temp drops a bit. Get home, park up and temp at normal again.

Fan issues? Seems to be related to increased rpm and I figure if its showing really hot then it would stay really hot right?
 
I have. When the engine is warm its right in the middle of min/max. When its cold its just below min. Surely that's not the cause?!
 
I thought it was supposed to be measured when stone cold? either way if there isn't enough water/coolant in the system, then optimum cooling wont be achieved

but yours sounds OK
 
Okay, coolant level fine now. Still having the issue. Fan sounds like its working overtime too.
