It would make a great looking car even better. Unlike this chap who seems to have modelled his facial hair on his partner's Brazilian.
 
He's still working on it though. He'll finish it once he's done with his carbon-fibre roof.
 
Anyone who's made flat pack furniture will appreciate the contribution of a thin panel to the structural rigidity of a construct. Take a set of drawers with two uprights, a top panel and a couple of bars across the bottom at floor level. This structure will stand with the drawers removed, but any lateral force leads to rapid deformation. Until the thin hardboard back panel is tacked into place the structure can lozenge and will readily fail and collapse. I wonder if a coupe without its roof panel might experience a marked drop in rigidity, likely most important in a rollover as suggested.

I've been pointed to a glass company that might be able to help, NGN in Halifax, but I'm having problems finding details for them. Anyone in the area that knows them?

When they have done things like this on West Coast customs etc they always seem to use Plexi Glass (excuse if spelling is wrong) I would guess because of weight? I'd also say you would have to have some kind of structural bracing so it becomes a non load part
 
Nothing replaces glass.

SMart cars have plexi glass and it becomes a mess after some weeks on the road.
