Fussy about non standard offsets?

Hi.
When I got my 3.0si it had a slightly corroded set of 108s. My plan was to wait until spring and refurb them. However, I had the wheels off the other day and noticed that the wheels as well as the tyres are far from good condition, so now I'm looking at a new set of wheels (probably an 18" staggered set) and my question is this. Will running a non standard offset have any negative effect on handling. I've looked at a few sets 8.5" front with 9.5" rear with ET 35 and 40 respectively. Any advice is greatly received.

Making sure the wheels fit without major contact is the main issue. Handling could be slightly affected but not in a 'negative' way
