So if someone were to hypothetically be taking a brake disk off and hypothetically manage to round off the inside of the aligning bolt so as to not be able to remove it... What would you do to get it off!?

Drill the head off the bolt so you can remove the disk. You will then be able to grip the bolt with a mole grips etc and hopefully turn it out.

Or u can a small hole through the centre and use a "easy out" to remove the bolt.

Or u cud try to turn the bolt by tapping the head of the bolt around using a centre punch and a hammer.

As welsh_z says Drill it out, Or centre punch.
Had this happen a number of times on various motors. They are not really a necessity just a nice to have. I always copper slip them when replacing and never tighten them overly hard.
