As said, don't pay for the paint protection - as said, such products only really work at their best on a properly prepared car (clean paint, no swirls etc) and the dealer just hasn't the time to do it. In fact, they'll probably add swirls when washing it in preparation for the application!
Any decent detailer can do a full detail and paint correction for several hundred points (£200 isn) and will do a much better job - and you'll have the knowledge thats its been done right, and they will probably give you tips as well.
Where are you based? I'm sure people can recommend someone (I can, but he's in Bristol, although does travel).
Tyre insurance....pure insurance policy and only you know your attitude toward that.
GAP insurance - I like it, but never at dealer prices. We have paid for it twice at the dealer, at £499 a time!!!! Since then I found ala.co.uk and got better cover for half the price. They say it will pay out the difference between what you paid and what the insurance pay out...but this figure is capped. The dealer policies I saw were to £10k. My Z4 was £32k new, and on a 4yr pcp with guaranteed future value of £12.5k. So I took the attitude that if I wrote it off near the end of the 4 years, I would need £20k back (assuming insurance paid £12.5k. And as I'm now getting rid of the Z4, the remaining policy can be put on my wife's new car.
