Cooking a sirloin joint

Sirloin is on offer at the local butcher and we had a joint last night. However, the digital thermometer is clearly broken as the meat was overcooked.

So I have bought a Thermapen 3. It is expensive but the discontinued colours are £12 cheaper. An orange one is winging its way to me now.

I will just have to have another sirloin joint to try it out now. Yummy.
 
Why did you use a thermometer a nice piece of sirloin with the fat crisp cooked for an hour no problem. Never used a thermometer in my life. If it's a big joint of pork stick the knife right in if the meat juices run clear its done
