Can the oil level sensor be bypassed?

Ok I am steadily stripping out all the tech in the Z.

All lighting has been rewired
All central locking has been rewired.
All windows rewired.

Do any of you here know if there is a way I would be able to bypass the oil display in the clocks and redirect it to an actual physical gauge mounted on the Z dash?

Thought I would ask before I start to manually figure it out.

I use an external scanner to check the oil level. Better to read in mm at a known temperature than rely on the vague dash display anyway.

What does an external scanner look like? Ive now gone through 3 lots of 1l edge since I took ownership mid last year of my 2007 2.5Si, the higher outout 218bhp engine, mileage then 32,400 and just on 34,000 now as using most days. Any thoughts are welcome about oil consumption, rather different from my Jazz which burns virtually zero oil. Zed just shot through MOT. TIA
