As for loosing some weight it all depends how far you want to go, strip out the interior and fit a light weight drivers seat, remove the air conditioning, possibly fit some smaller lighter wheels
Weight doesn’t really factor into top speed calculations…its mostly drag which has zero to do with mass and rolling resistance which has only a small bearing on the matter.
Weight affects acceleration but with masses including fuel and people of 1800-1900 kgs losing say 50kg of trim etc which would be hard work would only have a 3% impact on acceleration..
The only things short of stripping out trim / electronics is go for a manual , with a 4 pot engine on 17” tyres..
I doubt there is much that you can strip to save meaningful weight, particularly if you want to keep some level of luxury or refinement. If you want a lightweight car without luxury or refinement, just buy a Lotus.
Probably easeir to boost engine power unless you are really going to stripout the car!
Remove aircon, all electric motors - seats/ roof / strip out carpets and soundproofing. Stereo, ..........

Just how fast do you want to go - buy an e85 M or 3.0si with no options and strip out all the things that make it comfortable!
