I appreciate your concerns and it's a personal choice, but I would rather know someone can't easily steal our car. It would be very hard for the dealer to detect this unless they needed to remove a lot of the dashboard panels. It took me around three hours to install so that it was very hard to detect.
I think they would also be in a difficult position to justify how a switch on a diagnostic port would effect the cars operational functionality if they did detect it.
What they should really be addressing is the actual issue.
As mentioned, another alternative would be to install a dummy OBD port and move the real one out of the way. But this would mean more work each time you took it into the dealer to put it back again.
