Am I right in thinking wing mirror glass is glued to backing

Just have new glass to fit

If so do I need to remove the backing plate with the existing glass and then prise the glass off?

Or can I prise the glass off the plate in situ?

There is a recent post here http://www.z4-forum.com/forum/viewtopic.php?f=2&t=33104&p=452321&hilit=mirror#p452321

which also points you here http://www.z4-forum.com/forum/viewtopic.php?f=2&t=12299&hilit=bagsy&start=15

I'd suggest whipping the mirror and backing plate out and doing it off the car as the backing plate isn't the most robust of things.

I took mine off the other day after both (!!) mirror glasses decided to loose any adhesion they had with the backing plate in the space of 48hrs.

Google z4 wing mirror removal for instructions, but in short, angle mirror so it's facing down and then rotate the back section of the backing plate around using a small screw driver.

Hope that helps
Alex
