only difference ive seen is the //M logo stitched into the headrest?

Leather is finer grained and softer. There are fewer seams too.

I think Nappa was an option on all other models, but standard on the M.

is there an easy way to tell which type of leather you have?
i bought my m sport seats second hand so I cant use the vin coders to check and i'm just curious, it would be nice to know.

Post a picture of one and we can tell you. Not all //M seats have the logo so that is not a definitive way to tell. But as somebody else pointed out there are less seams on ///M seats also. There is no real grain to nappa either.
