Hi and welcome to the forum - an E86 is an excellent choice. 
I wouldn't rule out an SE if it had the M-Sport seats, and quite a few do seem to have them. I also wouldn't be too dogmatic about mileage either, unless you want a really low mileage example, as there are two members on here with E86s that have done over 200K. People in the UK have a big mental block about 100K mileages and values tend to take a hit as a result, so if you buy just over 100K miles the previous owner has taken that hit already!
FWIW someone on here compiled this detailed database which suggests only 31 Red manual E86s came to the UK so one of your other choices will probably be easier to find, but good luck with your search.

They do come up but they’re very rare. If you’re willing to potentially have to wait a while then you’ll be able to get one. As Mr Tidy mentioned, the other colours are a lot easier to find.

The cut boot carpets (shock replacement I guess) is also pretty rubbish for that price
I reckon it used to have them. It's got the red door cards, so I bet they used to be red msport seats.
It's got the msport steering wheel and black headlining (which would have been beige if it was an SE), suggesting a factory sport car, so it should have had msport seats. Why would you remove those seats, if it was factory fitted with them.
Maybe a totally genuine reason, but if you're interested OP, it's a question I'd be asking/cross referencing with the original build sheet.
