I like them all other than the wood finishes tbh! piano/carbon black works well with light coloured seats or red.

silver works better with black leather.

I have the cirrus trim which is like brushed/flipped alu and it works very well with my red leather.

I had this on my 3.0Si - really liked it, much better than plain alu. Never seen an M with it though.

I really like the cirrus, probably more than the carbon leather. These would be my top two but in my preferred interior of black leather I would probably be swayed to the cirrus just to lift the gloom of the interior. Shame they didn't offer it on the M by the sounds of it.

Not a big fan of wood trims in general, but quite like a lot of the grey wood trims you see these days. I bet some of them "wood" have worked quite well in a zed!

I'm with you on fake carbon stuff (wrapping/dipping etc), but there's no way any sane person would look at my leather dash and say that it looks like a piece of carbon fibre, it just doesn't! It does have a 'weave' effect but it's quite clearly leather.
 
My 2p worth;

Piano black is shiny, why on earth do you want light reflecting when you're driving
Wood, it's not a boat
Aluminum, classy and helps brighten up a dark interior, but looks cheaper than leather
Leather, the best option
