Be careful how you do it - if it's obvious that it's been removed, or the tester knows that it should have two cats, it's now a fail

In the MOT testers manual the DVLA said:
Only components that are visible and identifiable, such as catalytic converters, oxygen sensors and exhaust gas recirculation valves will be checked.
The exhaust system will fail the MOT if:
- Part of the system is missing or excessively deteriorated.
- Mountings are missing or damaged so that the exhaust system is insecure

Pretty sure that's only a north america thing (they have a second set in the headers) not eu/uk.

Pre-facelift cars have secondary cats; facelift cars don't.
They're behind shields, in the front half of the exhaust system. The shields can be removed and then replaced after the cats have been cut out, so all looks untouched.

Revs more freely and sounds good!
