Yes the ride will change but I've never heard the ride of normal tyres being called jumpy and fidgety compared to run flats - the opposite is the normal. Those pressures sound way too high. I'm not familiar with your car, wheel tyre combo, but I'd keep a close eye on wear as you could well be running on the centres of the tyres.
