What sort of difference do the rear z4m springs make? in ride height and ride quality?

Cheers

I'm not sure to be honest,

They were on the car when I bought it and only noticed they were Z4M springs when I fitted the Bilstein B12 Kit.

It drove really well and looked to be normal M sport height when they were fitted if that helps.

Ride height on a Z4M is 6mm higher than 3.0i M Sport suspension - TIS says Z4M rear ride height is 594mm against 588mm for 3.0i with M Sport suspension

Could some of that be the different size tyres the m cars use compared to the 3litre?

No, as the way it is measured takes away that variation. It is measured from the bottom of the rim to the wheel arch.
