Fantastic place to visit, I was working over there for a week so it wasn't exactly a holiday, but managed to see a few attractions.
Mall of the Emirates is worth a visit to see the amount of supercars parked outside the enterance.
Overall you won't be disappointed 8)

Burj Khalifa - pre book as it gets busy, we went at 5.30 pm which was a god time as you can see the fountain display from up the top (starts at 6 pm) then when you get down you can watch again at ground level.
Go to the Dubia shopping mall (right by the Burj) great shops and a massive aquarium.
Atlantis hotel aquarium...unbelievable.....but go first thing in the morning as gets busy after 10 o'clock.
360 degree bar is really great overlooks sail and wave hotels (if you're young and cool like me 8) )
Frankies Restaurant (Frankie Dettori & Marc Pierre White) was nice and not too expensive, then sit outside on the strip and watch the Fezza's, porka's, Lambo's & muscle cars cruzin past....that's just the police :lol:
Dubai creek boat trip was nice.
Desert 4x4 trip (we didn't have time for this) but take travel sickness tablets as really bumpy.
Sun cream, as it's +30 deg at the mo.......at midnight!!!!

Gold and Diamond market, amazing prices
Karama souk for fakes. All the top designer bag fakes etc are hidden out of view though, some shops have little hidden doorways, some have the stuff stashed out of the shop and they send a guy off on a moped to get what you want. Haggle them big time 
The waterpark at Atlantis is amazing. Nearly all the rides you sit in tubes, but the beauty of the park is you go down a ride in your tube (single or double) into a network of lazy rivers (with some rapids...) You stay in your tube and a conveyor belt takes you back to the top of the next ride, with you still in your tube!
Rent a car.
If you're going to get about anywhere, generally works out cheaper than taking a taxi (roads are easy enough to drive on).
Also depending on when you go, worth going down to Jumeirah Beach Residence on a Thursday/Friday evening. Few nice places to eat and all the locals are out in full swing with their cars (worth a walk down for sure!)

I was going to rent one last visit - worked out it was cheaper to rent a car to get to Ferrari World than get taxis. But you need an International driving licence.

Got the burj Kahlifa booked on a daytime and also a nighttime trip, as i want to take lots of photos and couldn't decide which time to go!
Got a camel ride / safari / dune buggy racing two day trip booked.
Oh and sand-boarding! I live next to the Chilfactor indoor ski-slope in manchester, so I can board on snow any time, but on sand shall be an experience!
Gotta go to the aquarium as I'm really into keeping marine fish, got my own slice of reef in my living room.
I'd love to go to the water parks, i hear you go through tubes in shark tanks! But sadly I can't swim, so will be giving them a miss!
Cant wait to go super car spotting.
Was Ferrari world really worth it? I've heard many mixed reviews!
The markets and villages are on the list as I want to experience some of the 'old town'.
Any tips for fake watches?! Not adversed to buying the real thing, but sometimes the 'authentic replica' can be a much better value! haha!

Ferrari world was worth it for me just to ride Formula Rossa (fastest coaster in the World). I was glad I went overall. Fake watches? Karama Souk/market probably the best choice. Not sure if being a non-swimmer matters too much for the water parks, nothing is over waist deep really from what I remember.

Just a suggestion, go to a bookstore and buy "the entertainer". It's a book full of vouchers for all sort of stuff including Atlantis Water Park, restaurants etc..
Costs about £30 but you get like 1000 vouchers... most of which you won't use but the ones you do, will easily save you a couple of hundred quid. Well worth it for the price.
The usual ones I use are one free entry into Atlantis (usually about £40) and free main courses of 50% off restaurant bills.
