Thought I'd update this thread...
I went with 8.5j et35 front and 9.5j et45 rear in the end. I'm really happy i did because they look great but don't have too much poke. The rears can definitely handle a 3-5mm spacer but I don't really think they need it. Seeing the wheels on the car, i feel an offset of et35 on the rear would've been too small. The fronts are are a perfect fit in my opinion.
I found that these wheels are identical to the Avant Garde M359s as they share a licensed design. In case anyone is wondering, AG seem to call the same colour gunmetal whereas Veemann calls it graphite. At least to me it looks the same but i could be wrong. They feel well made and relatively light, and the finish is excellent.
As for tyres, Michelin PSS 255/35 works really well on a 9.5j wheel, but the 225/40 Vredestein Ultrac Vorti does look a bit stretched on 8.5j. I don't mind the look too much though!
