I need to "refresh" paint about theses 2 parts, possible to "unmount" ?

Skirt can be removed, not sure about the A Pillar though on E89. E85/6 it part of the chassis and doesn't have a cover.

No need to remove, the skirt panel can be adequately isolated using masking tape, so can the pillar. No alignment issues after reassembly either.

I don't think the A pillar is painted, it's looks more like gloss black plastic. If it is scratched up (swirl marks) it can be polished up, no need for paint. The sills can be easily removed to be painted, you can paint without removing by masking but to do it properly best to remove it especially as it isn't that difficult to do.

BMW resprayed my new sill for £80 off the car.
They have a dedicated body shop in Dudley.

When i bought my car, looked as though someone had tried to jack it up in the wrong place and dented the sill.
Bought a straight one off ebay for £50, wrong colour though, so had BMW respray it, they where the cheapest.

There are a couple of screws and a row of plastic pins to pull, to remove, then just gently prise horizontally front and rear.

That's very cheap for BMW, here I have been quoted 80€ each sill (with the bodyshop removing sill before painting). I need to get both sides done since they are littered with stone chips from the previous owner. They aren't very visible so have been putting the job off but will have to get them done at some point!
