Make them more money!
Basically, the older cable supports less vehicles, in fact it only supports the older eg < 2004 E85 and a few others. The New GEN 2 adapter supports pretty much all the other models. The black "add-on" basically slows down the protocol to work with older cars too. That's kinda the gist of it

That's exactly what I have, the two adapters preform some kind of wizardry and it all works
3.0i Maldives blue, Coilovers, Bola B1's, Buckley06 Gear knob, Handbrake & Indicator badges, Backbox delete, CDV delete, cupra r splitter, RAM air filter, Bigger Brakes, M3 ARB, SMF.

Forgive my ignorance, I’m a newbie Z4 owner
There's not massive amounts of things you can code, it all depends on what options your car has in the first place, i'm sure others will update with any features i miss out... my coupe was a relatively basic spec!
Headlight washers (if fitted) - turn on/off, change functionality. I turned mine off to save on water!
Boot operation - change how the remote operates the boot, i set mine to one push rather than holding it for 2 secs.
Set up DRLs - only really worth it on Xenon headlights, mine didn't have them but set up on a friends Z4.
Power fold mirrors (if fitted) - set them up to fold when you lock the car.
Beeps and indicator flashing when locking/unlocking
Window operation - allows movement when door is opened or key removed to continue
Turn off bulb checks - useful if you install LED bulbs
Probably a few other bits and pieces and the fault reading/clearing was always pretty useful
