Rattling
There is an occasional rattle behind the steering wheel, possibly the section with speedo etc but also seems to be behind that, really annoys me Anyone have any tips to fix and materials to use without ripping the car apart?

I've got a similarly located rattle, only when on really hard rough roads.
I think I need to remove the clocks and apply some felt tabs. I believe the clocks are easy to remove, but yet to find a guide.

Rattling
Right, this may sound daft but I had the same thing. Like you i was convinced the rattle was from the dash/wheel area.
I discovered quite by accident that it was the sliding covers over the mirrors on the flip down sunshades!!!!
If I leave the mirror covers open, sunshades up, no rattle..... mirror covers closed, sunshades up = Rattle!!
